Indulge in the mild spiciness, sweetness, and savory goodness of this Singaporean dish.
Ingredients
1 packet of Omega cooked mussels (1kg)
For paste
1/2 onion
5 cloves garlic
1 cm slice ginger
2tbsp chilli flakes
For sauce
1 1/2 tbsp ketchup
6 tbsp sweet chili
1/2 tbsp fish sauce
1 tbsp sweet vinegar
2 tbsp soy sauce
2 tbsp sugar
8 tbsp water
Method
Blend all paste ingredients in a food processor until smooth.
In a small bowl, combine all sauce ingredients except water.
Cook the paste and sauce: Heat oil on medium to high heat, fry the paste for 2 mins, then lower the heat and add in the sauce and water.
Bring the sauce to a slightly thicker consistency. Drain the Omega cooked mussels and add them to the sauce. Stir the mussels on medium heat for 3 mins, ensuring they are coated with the spicy and tangy sauce.
Transfer to a large plate, pouring over any sauce from the pan. Garnish with coriander or spring onion and enjoy!
