Chilli Tomato Butter Mussels

Serves: 2-3

Cook: 10 minutes


Table with large bowl of greenshell mussels, bread, butter, basil, flowers, lemons, and a bottle of wine in a bright kitchen.


Ingredients:

  • Omega Seafood Greenshell™ Mussels (1kg) stock included

  • 2 tbsp butter

  • 1 tbsp olive oil

  • 3 cloves garlic, minced

  • 1 small shallot (or ½ onion), finely diced

  • 1 tsp chilli flakes (adjust to taste)

  • 1 tbsp tomato paste

  • 400g can crushed tomatoes

  • Salt and freshly cracked black pepper

  • Handful fresh basil, chopped

  • Crusty sourdough or baguette, to serve

  • Lemon wedges (optional)

 

Method

  1. Heat the butter and olive oil in a large frying pan over medium heat.

  2. Add the shallot and garlic and cook for 2–3 minutes until soft and fragrant.

  3. Stir in the chilli flakes and tomato paste. Add the crushed tomatoes and simmer for a few minutes.

  4. Add the Omega Seafood mussels (including the natural juices from the pouch). Gently fold through and heat for 2–3 minutes only. Do not boil, as the mussels are already fully cooked.

  5. Finish with chopped basil and a squeeze of fresh lemon if desired.

  6. Serve immediately with warm crusty bread to soak up the spicy tomato butter sauce.
